Turmeric

Turmeric (Curcuma longa), the bright yellow of the spice rainbow, is a powerful medicine that has long been used in the Chinese and Indian systems of medicine as an anti-inflammatory agent to treat a wide variety of conditions, including flatulence, jaundice, menstrual difficulties, bloody urine, hemorrhage, toothache, bruises, chest pain, and colic.

Coriander

Coriander seeds have a health-supporting reputation that is high on the list of the healing spices. In parts of Europe, coriander has traditionally been referred to as an "anti-diabetic" plant. In parts of India, it has traditionally been used for its anti-inflammatory properties. In the United States, coriander has recently been studied for its cholesterol-lowering effects.

Cinnamon

Although available throughout the year, the fragrant, sweet and warm taste of cinnamon is a perfect spice to use during the winter months.

Cinnamon has a long history both as a spice and as a medicine. It is the brown bark of the cinnamon tree, which is available in its dried tubular form known as a quill or as ground powder. The two varieties of cinnamon, Chinese and Ceylon, have similar flavor, however the cinnamon from Ceylon is slightly sweeter, more refined and more difficult to find in local markets.

Cinnamon's unique healing abilities come from three basic types of components in the essential oils found in its bark. These oils contain active components called cinnamaldehyde, cinnamyl acetate, and cinnamyl alcohol, plus a wide range of other volatile substances.

Chicken Curry (Masala) with Maywah Garam Masala

Ingredients

  • 1 kg chicken
  • 4 tbsp. curd (plain yoghurt)
  • 1 tsp. Maywah turmeric powder
  • 1 cup onion, finely chopped
  • 1 tsp. Maywah ginger powder
  • 1 tsp. Maywah garlic powder
  • 2 tsps Maywah chilli powder
  • 2 tsps Maywah coriander powder
  • 1/4 cup oil
  • Salt to taste
 

Directions

  • Cut chicken into pieces and marinate with curd and salt and keep aside for an hour.
  • Heat oil and fry turmeric.
  • Add onion and fry till light brown.
  • Then add ginger and garlic mixed in a tbsp. of water and stir well.
  • Then add chilli and coriander mixed in 4 tbsps water. Stir well until the oil comes out clear.
  • Now add the chicken and sufficient water to make good sauce.
  • Cover and let cook on gentle heat till chicken is done.

Directions

Add 2 heaped tablespoonfuls of Maywah satwa to your cereal bowl.Then Stir as you add warm milk to desired consistency and sugar(splenda) to desired taste.Serve warm. This make a delicious and nutritious anytime snack.Try it.

Bhoonjal Chicken Recipe

Ingredients

  • 1lb bonelessskinless chicken(breast or thighs)
  • 2 tsp Maywah Brand ground garam massala
  • 1 tsp Maywah ground Roasted cumin
  • 2 tsp tomato paste
  • 2 diced onions
  • 3 cloves minced garlic
  • 2 tablespoons cassava casareep
  • 1/4 cup olive oil

Directions

  • Heat oil in skillet.Add onions and sautee until golden brown.
  • Add water to garam massala, cumin, and garlic-- Stir into a paste.then add to onions and cook on low heat for 2-3 minutes.
  • Add ground pepper to desired taste.
  • Then add chicken pieces to the cooking pan and mix.
  • Add salt to desired taste.
  • Cook for about 10 minutes then add casareep.
  • Allow to cook until chicken appear tender and water dried down.
  • Garnish with chopped green onions.
  • Serve as an appetizer or with any meal such as dhal and rice.

Chicken Curry-Guyanese style

Ingredients

  • 2 lb chicken pieces
  • 3 minced garlic cloves
  • 1 large diced onion
  • salt
  • chilli pepper
  • 2and1/2 heaped teaspoonfuls Maywah garam massala
  • 1 tsp Maywah ground turmeric
  • 4 heaped teaspoonfuls Maywah brand madras curry powder
  • 2 tsp tomato paste
  • 2 large potatoes(optional)
  • olive oil

Directions

  • Mix garlic,chillies,garam massala,turmeric and curry powder with water to form a thin paste.
  • Heat oil in skillet--add onions and sautee until golden brown.
  • Add masala paste to skillet and cook for 2 minuteson low heat.
  • Add tomato paste and cook for another minute.
  • Add chicken potatoes and salt and mix.
  • cover skillet and allow to cook for about 15 minutes.
  • Add warm water enough to cover chicken.
  • Allow to cook until gravy is at desired consistency and chicken has a loose texture.
  • Garnish with chopped green onions or cilantro.
  • Serve warm with rice,dhal puri,or roti.
